Harissa Chicken Roast

Harrisa and chicken roast together, umm does it sound unusual? Of course it does. It a fusion of two flavorful dishes harrisa and chicken roast. How would you like if both of them are combined in a single dish? You can have that multi flavored taste of harrisa in your chicken roast by following the given recipe. Just don’t bore yourself with the monotonous dishes. Try some fusion this time. Treat yourself a bit.

Things you need:

For the harrisa masala:

  1. ½ teaspoon cumin seeds (ground)
  2. ½ table spoon coriander seeds (crushed)
  3. ½ tea spoon Fennel seeds
  4. 1 tablespoon Red chili powder
  5. 4/5 cloves of garlic
  6. 2 table spoons of extra virgin olive oil
  7. salt to taste and lemon juice to add more flavor

For the marination:

Chicken pieces, the above told harrisa masala (2-3 table spoons). In the end you need coriander and lemon to garnish with.

Steps to follow:

Prepare a harrisa masala mix in a separate bowl by mixing the quantities of the ingredients mentioned above.

Take 2/3 tablespoons from that masala; add lemon juice to the masala to prepare a paste like material for marination of the chicken.

By using a knife, make small cuts on the chicken pieces so that the marination mix can penetrate well into the chicken and make it more flavorful.

In a dish, add the chicken pieces and rub the marination paste on the chicken pieces and leave it overnight.

Next day, in a frying pan heat the oil and fry the marinated chicken.

The stock which is left should not be discarded. After frying add all the chicken pieces into the pan and let it stay on heat for some while with the lid on it.

After 3-5 minutes dish out the chicken and garnish it with freshly cut coriander leaves. Now your harrisa chicken roast is ready to be served.
