It always feels great to surprise people with your cooking skills. According to Chef Yotam Ottolenghi, British and American chefs doesn’t know much about the versatility of eggs and how far one can take a simple egg recipe.
He further explained that seasoning spinach with scallions and molten leeks with baked eggs on top of it. Finishing the dish with spoonful of yogurt, drizzled butter with sprinkled smoked chilli powder called Kirmiz Biber. (One can also use simple smoked pepper flakes). This dish can be served in two small skillets or one big skillet. Lets talk about the recipe preparation.
- 2/3 cup plain Greek-style yogurt
- 10 cups fresh spinach (10 ounces)
- 1 garlic clove, halved
- 2 tablespoons olive oil
- Kosher salt
- 2 tablespoons unsalted butter, divided
- 2 tablespoons chopped scallion (pale-green and white parts only)
- 3 tablespoons chopped leek (pale-green and white parts only)
- 1 teaspoon fresh lemon juice
- 4 large eggs
- 1/4 teaspoon kirmizi biber (Turkish chili powder), or 1/4 teaspoon crushed red pepper flakes and a pinch of paprika
- 1 teaspoon chopped fresh oregano
Preheat the oven at 300°, meanwhile mix garlic and a pinch of salt in 2/3 cup of simple Greek yogurt and set aside.
Heat 1 tbsp of oil and butter in a large skillet over low to medium heat. Pour in scallion and leek and mix well. Cook this butter mixture for 10 minutes over low heat until scallion and leeks are soft. Now season with salt, lemon juice and add spinach leaves and keep turning repeatedly on medium to high flame. Cook to 5-6 minutes until it’s wilted.
Now take another big skillet and pour in the mixture leaving all the excess fluid behind. If you are using two small skillets than divide the spinach mixture equally into two smaller skillets. Now make 4 scoops in the center of the spinach mixture in larger skillet or 2 scoops each if using smaller ones. Break each egg carefully into the each scoop and take care of the yolk to be intact. Put the skillet in preheated oven and bake for 12 to 15 minutes or until the egg whites are cooked well.
Take a small saucepan and melt 1 tbsp of butter over low heat and sprinkle a pinch of salt and smoked kirmiz biber or chilli flakes and cook until the foam starts to form or for 1-2 minutes. Add oregano and cook for 40 more seconds and turn off the heat.
Remove garlic cloves from the yogurt mixture and pour over the egg spinach mixture and drizzle with prepared spiced butter sauce. And enjoy this versatile egg recipe.
